Getting back into the blog saddle (Madeleines)

So I have been really busy with cub scouts, work, and life around the house.  I have lots to say and will be posting on a more regular basis again.  So I decided to give you a cookie I love that you have to have a special pan to get them just right.  It is a French creation called a Madeleine.  My coworkers like treats so I made a batch to give them.

The flavoring for these are really simple, I decided to go with lemon.

Lemon Madelines:
Makes 24:

1 stick butter melted and cooled to room temperature
3 eggs
1 cup of sugar
1 1/2 cup flour
1tsp baking powder
1 cap full of lemon juice
1 1/2 cup powder sugar
3-4 tbsp lemon juice

Preheat oven to 375 degrees F
So first thing to do is melt the butter and set aside.

In a separate bowl mix eggs and sugar together till it turns pale color.  Combine the flour and baking powder in a different bowl.

Fold together flour into sugar-egg mixture.  Add lemon juice and butter  and fold together.  Let this batter sit in the fridge for one hour.

Brush pan with some melted butter and scoop in 3/4 of the cavity filled.  Bake for 10-12 minutes.

While baking mix the lemon juice and powder sugar together to make glaze.

 Dip cooled Madeleines in glaze.
